The Cours Saleya is much more than a market: it's the beating heart of Nice, an elongated esplanade between the old town and the sea where one of the Mediterranean's most colourful spectacles unfolds every morning. From 6am to 1pm, flower stalls compete in chromatic intensity with Provençal fruit and vegetable stands.
Flowers are the absolute stars: Grasse roses, Tanneron mimosas, Valensole lavender, seasonal peonies. The food stalls offer a showcase of Niçoise cuisine: Nice olives, tapenade, pissaladière, fougasse, goat cheese and steaming socca in paper cones.
