Chez Thérésa is an institution on Nice's Cours Saleya, a street food stall that has been serving the city's best socca for over half a century. Socca is the most emblematic Niçoise street food: a thick, crispy crêpe made from chickpea flour, olive oil, water and a pinch of salt, baked in a huge wood-fired oven. ### History and Tradition Socca has Genoese origins — it arrived in Nice when the city was part of the Kingdom of Sardinia. Chez Thérésa prepares it following the traditional recipe: the batter is poured into large round copper trays called 'tourtes' and baked in an olive-wood-fired oven. The result is a crêpe with a crispy golden exterior and a creamy, slightly moist interior. ### The Experience Socca is served hot, cut into irregular pieces on brown paper, sprinkled with freshly ground black pepper.
