The cooperative Santo Wines winery, in Pyrgos, combines the island's best terrace with professional tasting. The standard package includes 6 wines (dry assyrtiko, nykteri, sweet vinsanto) paired with cheese and local products.
### Assyrtiko: The Star
Santorini's assyrtiko is considered one of the great white wines of the Mediterranean. Fresh, mineral, with citrus notes and a saline finish that evokes the sea. The vinsanto (not to be confused with its Italian counterpart) is a sweet wine made from sun-dried grapes, perfect as a dessert.
